Ingredients:
- 1 red onion
- 800g green peas
- 3 handfuls baby spinach
- 1/2 lemon
- olive oil
- salt
- pepper
- Saute the red onion in olive oil over low-medium heat for about 3 - 5 mins till glossy but still al dente.
- Toss in the peas and saute on higher heat.
- Once the peas are al dente (about 2 mins), add the baby spinach and allow to wilt (takes about 1 minute).
- Drizzle with lemon juice, salt and pepper.
- Enjoy!
